Coolant temperature on LCD display goes up and down when cold

I been having my check engine light go on and off for a few months. I did notice on my LCD display when I have my coolant temperature displayed the temperature goes all over the place and I see a "lo" and the engine wants to cut out. The mechanical gauge for the coolant temperature works fine. I did change out the coolant temperature sensor out by the water pump. Still getting the problem. Wondering if not bleeding the coolant system is the cause. Just had my water pump and distributor change then about a couple weeks later this problem with the check engine light and coolant temp goes up and down
