1971 CORVETTE 350/270 H.P Quadjet carb. when shifting into gar car revs up.

On 3 different occassions the engine has revved up on its own. This has happened twice in forward gear and once in reverse. Each time it was like the rear end was going to explode. The tires spin (like a burn out) before I shut the key off. I have replaced the cable and replaced the CARB, with a rebuilt Quadrajet date correct. What can cause this to happen? I can not go through this again.
